Ingredients

  • 2 eggs

Instructions

  2. Mix zucchini, eggs, bread crumbs, Parmesan, garlic, green onions, salt, and pepper in a bowl.
  3. Heat olive oil in a frying pan over medium heat.
  4. Form the mixture into small patties and place them in the hot pan.
  5. Fry for 3–4 minutes on each side until golden brown.
  6. Transfer to a paper towel-lined plate and serve hot with your favorite dip.
