Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tbsp lemon juice
  • 1/2 cup berry jam or glaze
  • 1 cup fresh strawberries, halved
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries


Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter. Press into springform pan and bake 8 minutes. Cool.
  3. In a bowl, beat cream cheese until smooth. Add sugar and mix, then eggs one at a time.
  4. Add vanilla, sour cream, and lemon juice. Blend just until smooth.
  5. Pour filling over crust. Bake 55–65 minutes until center is set.
  6. Cool in oven with door ajar for 1 hour. Chill in fridge 6 hours or overnight.
  7. Top with berry glaze, then arrange fresh berries on top.

Notes

  • Use room temperature cream cheese for smooth texture.
  • Add a pan of water in the oven to reduce cracking.
