Ingredients
- 2 lbs stew beef, cubed
- 1 onion, sliced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1/2 cup sour cream
- 4 oz cream cheese
- 1 tbsp cornstarch (optional)
- Salt and pepper, to taste
- 12 oz egg noodles
- Fresh parsley, for garnish
Instructions
- Season beef with salt and pepper. Optional: brown in a skillet for extra flavor.
- Place beef, onion, garlic, mushrooms, broth, Worcestershire sauce, and mustard in slow cooker.
- Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
- Stir together sour cream and cream cheese, then mix into slow cooker.
- Optional: mix cornstarch with water and stir in to thicken sauce.
- Cook egg noodles separately and drain.
- Serve beef mixture over noodles and top with parsley.
Notes
- Add red wine with broth for deeper flavor.
- Skip mushrooms if preferred.
- Use Greek yogurt instead of sour cream for a lighter version.
