Ingredients

  • 1 cup chopped fresh rhubarb
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh chives or thyme for garnish

Instructions

  1. Preheat oven to 400°F. Pat pork dry and season with salt and pepper.
  2. Heat olive oil in oven-safe skillet and sear pork on all sides, about 3–4 minutes per side.
  3. Transfer skillet to oven and roast pork for 15–18 minutes or until internal temp is 145°F. Rest before slicing.
