Ingredients

  • 2 lbs baby potatoes, halved
  • 4 hard-boiled eggs, chopped
  • 3 celery stalks, diced
  • 1/3 cup red onion, chopped
  • 3/4 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste
  • 1/2 tsp paprika
  • 2 tbsp chopped fresh parsley


Instructions

  1. Boil potatoes until fork-tender, then drain and cool slightly.
  2. Boil eggs for 10 minutes, cool and peel.
  3. Chop celery, onion, and eggs. Set aside.
  4. Mix mayo, mustard, vinegar, salt, and pepper in a small bowl.
  5. In a large bowl, combine potatoes with dressing, then fold in veggies and eggs.
  6. Chill for 1 hour. Garnish with paprika and parsley before serving.
