- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/3 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Boil pasta until al dente. Drain and rinse under cold water.
- Chop all vegetables and parsley. Crumble the feta.
- Whisk together olive oil, vinegar, mustard, garlic, salt, and pepper.
