  • 1/2 cup unsalted butter, melted
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup Greek yogurt or sour cream
  • 1 1/2 cups diced fresh peaches
  • Streusel topping: 1/4 cup flour, 2 tbsp sugar, 1/4 tsp cinnamon, 2 tbsp butter


Instructions

  1. Preheat oven to 375°F and line a muffin tin with liners.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix melted butter, brown sugar, and granulated sugar.
  4. Add eggs, vanilla, and yogurt; whisk until smooth.
  5. Combine wet and dry ingredients just until mixed; fold in peaches.
  6. Prepare streusel by mixing flour, sugar, cinnamon, and butter until crumbly.
  7. Spoon batter into muffin cups and top with streusel.
  8. Bake for 18–22 minutes or until a toothpick comes out clean.

Notes

  • Use canned or frozen peaches if fresh ones aren’t available.
  • Don’t overmix the batter to keep muffins tender.
