Ingredients

  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 zucchini, thinly sliced
  • 4 ripe tomatoes, chopped
  • Salt and pepper to taste
  • Fresh basil leaves, chopped
  • Grated parmesan cheese for topping


Instructions

  1. Bring a pot of salted water to a boil. Cook spaghetti until al dente. Drain, reserving 1/2 cup of pasta water.
  2. In a skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
  3. Add zucchini slices and cook for 3–4 minutes until just tender.
  4. Add tomatoes, salt, and pepper. Simmer for 5–7 minutes until tomatoes break down into a sauce.
  5. Add cooked spaghetti and reserved pasta water. Toss to coat evenly.
  6. Remove from heat, add chopped basil and top with parmesan. Serve warm.

  • Swap spaghetti with gluten-free pasta if needed.
  • Add chili flakes for a bit of heat.
  • Use cherry tomatoes for extra sweetness.
