Ingredients

  • 2 pounds beef stew meat
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 cup sour cream
  • 2 tablespoons cornstarch
  • 12 oz egg noodles
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste


Instructions

  1. Season beef with salt and pepper; sear in skillet if desired.
  2. Add beef, mushrooms, onion, garlic, broth, Worcestershire, and Dijon to slow cooker; stir.
  3. Cook on low 7–8 hours or high 4–5 hours until tender.
  4. Mix cornstarch with water; stir in to thicken sauce 30 minutes before serving.
  5. Stir in sour cream; adjust seasoning.
  6. Cook egg noodles; drain.
  7. Serve stroganoff over noodles; garnish with parsley.
