- 2 pounds beef stew meat
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1/2 cup sour cream
- 2 tablespoons cornstarch
- 12 oz egg noodles
- 2 tablespoons chopped fresh parsley
- Salt and black pepper, to taste
Instructions
- Season beef with salt and pepper; sear in skillet if desired.
- Add beef, mushrooms, onion, garlic, broth, Worcestershire, and Dijon to slow cooker; stir.
- Cook on low 7–8 hours or high 4–5 hours until tender.
- Mix cornstarch with water; stir in to thicken sauce 30 minutes before serving.
- Stir in sour cream; adjust seasoning.
- Cook egg noodles; drain.
- Serve stroganoff over noodles; garnish with parsley.
