Ingredients

  • 1 pound ground beef
  • 12 oz elbow or cavatappi pasta
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (8 oz)
  • 1 can kidney beans, drained
  • 3 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 2 green onions, sliced, for garnish


Instructions

  1. Heat large pot; brown ground beef.
  2. Add onion and garlic; cook until softened.
  3. Add tomatoes, sauce, beans, broth, chili powder, cumin, salt, and pepper. Stir well.
  4. Bring to boil; add pasta and stir.
  5. Reduce heat; cover and cook 12–15 minutes, stirring occasionally.
  6. Stir in half of cheddar until melted.
  7. Serve topped with remaining cheese and green onions.

Notes

  • Add cayenne or jalapeños for heat.
  • Swap kidney beans for black beans.
  • Use any short pasta shape you like.
