- 1 pound ground beef
- 12 oz elbow or cavatappi pasta
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 1 can kidney beans, drained
- 3 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 2 green onions, sliced, for garnish
Instructions
- Heat large pot; brown ground beef.
- Add onion and garlic; cook until softened.
- Add tomatoes, sauce, beans, broth, chili powder, cumin, salt, and pepper. Stir well.
- Bring to boil; add pasta and stir.
- Reduce heat; cover and cook 12–15 minutes, stirring occasionally.
- Stir in half of cheddar until melted.
- Serve topped with remaining cheese and green onions.
