- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/2 cup Italian dressing
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook pasta until al dente. Drain and rinse under cold water.
- Prep all vegetables: halve tomatoes, slice cucumber and onion, and halve olives.
- In a large bowl, combine cooled pasta, veggies, olives, and feta.
- Add dressing and toss until evenly coated.
- Chill for 30 minutes, then toss again and adjust seasoning if needed.
Notes
- Add grilled chicken or chickpeas for more protein.
- Use balsamic or lemon vinaigrette for a twist.
