Ingredients

  • 1 pound ground beef
  • 1 can Rotel tomatoes with green chilies
  • 8 oz cream cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 12 oz pasta (fettuccine or your choice)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Boil pasta in salted water; drain and set aside.
  2. Heat olive oil; cook onion until translucent.
  3. Add garlic; cook 1 minute.
  4. Add ground beef; cook until browned, drain excess grease.
  5. Stir in Rotel tomatoes; mix well.
  6. Lower heat; add cream cheese and heavy cream. Stir until smooth.
  7. Add pasta; toss to coat.
  8. Stir in Parmesan; season with salt and pepper. Garnish with parsley and serve.
