  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1 can coconut milk (13.5 oz)
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste
  • Cooked rice, for serving


Instructions

  1. Mix ground chicken, onion, 1 clove garlic, cilantro, panko, egg, salt, and pepper in a bowl.
  2. Form into meatballs; place on baking sheet.
  3. Bake at 400°F (200°C) for 18–20 minutes until cooked through.
  4. Heat skillet; sauté remaining garlic and ginger until fragrant.
  5. Add curry paste; cook 1 minute.
  6. Stir in coconut milk, soy sauce, lime juice; cook until smooth.
  7. Add meatballs; simmer 5–10 minutes in sauce.
  8. Serve over rice; garnish with cilantro.
