  • 2 chicken breasts cut into chunks
  • 1 cup white rice
  • 2 tbsp butter
  • 2 garlic cloves minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped parsley


Instructions

  1. Season chicken with salt, pepper, and paprika. Cut into chunks.
  2. Heat 1 tbsp butter in a skillet and sear chicken until golden. Remove and set aside.
  3. Add remaining butter and garlic, sauté until fragrant.
  4. Add broth and rice, bring to a simmer. Cover and cook 15 minutes until rice is tender.
  5. Stir in cream and cheese, return chicken to pan. Simmer 5 minutes until creamy and hot.
  6. Garnish with parsley and serve warm.
