Crack Breakfast Sliders

Crack breakfast sliders became my weekend lifesaver after hosting a surprise brunch for my cousin’s birthday where I needed something that fed a crowd without requiring a ton of effort so I layered up eggs bacon cheese and buttery rolls into a single tray and when I pulled them from the oven the smell alone had everyone circling the kitchen.

Crack Breakfast Sliders

Ever since then I’ve made them for game days road trip mornings and even lazy Sundays and what I love is how they’re totally customizable insanely delicious and ridiculously easy to make ahead so whether it’s for guests or just family they’re always a major hit.

Ingredients

Here’s what I use for this recipe. You can always make substitutions if you prefer!

  • Hawaiian sweet rolls – The soft, sweet base that holds everything together.
  • Scrambled eggs – The protein-packed centerpiece of each slider.
  • Cheddar cheese – Melts beautifully and adds rich, savory flavor.
  • Cooked bacon – Brings crispness and a smoky, salty bite.
  • Mayonnaise – Adds creaminess and a smooth layer between eggs and buns.
  • Butter – Brushed on top to help the buns toast golden brown.
  • Everything bagel seasoning – Gives the sliders that irresistible crunch and extra flavor.
  • Maple syrup – Optional but adds a sweet-savory depth when brushed on bacon or rolls.

Tools You’ll Need

  • Baking dish or sheet pan – Helps the sliders bake evenly and stay together.
  • Serrated knife – Makes it easy to slice the rolls in half without tearing them.
  • Skillet – I use it to scramble the eggs and crisp up the bacon.
  • Spatula – Perfect for flipping eggs and layering the ingredients neatly.
  • Pastry brush – For spreading butter or maple glaze on top of the rolls.
  • Foil – Used to cover the sliders while baking and keep them soft inside.

Instructions

Step 1:

I preheat the oven to 350°F and lightly grease a baking dish or line it with parchment paper.

Step 2:

Using a serrated knife, I slice the entire block of Hawaiian rolls horizontally without separating them and place the bottom half in the dish.

Step 3:

Next, I cook the bacon until crispy then set it aside on a paper towel and in the same skillet I scramble the eggs until just set and fluffy.

Step 4:

I spread a thin layer of mayonnaise on the bottom half of the rolls then I evenly layer the scrambled eggs on top followed by the bacon and then the cheddar cheese.

Step 5:

I gently place the top half of the rolls back on and brush them generously with melted butter and sprinkle on everything bagel seasoning for that irresistible finish.

Step 6:

I cover the dish with foil and bake the sliders for about 15 minutes then I uncover them and bake for 5 more minutes until the tops are golden and the cheese is perfectly melted.

Step 7:

Letting them rest for just a few minutes makes them easier to slice and serve without everything sliding out.

Tips

For extra flavor, I’ve brushed maple syrup on the tops before baking and it adds such a delicious glaze. If I want to prep ahead, I fully assemble the sliders the night before and bake them in the morning. I’ve also swapped out bacon for sausage patties or even veggie sausage and they turn out just as tasty.

Ways to Serve

These sliders are perfect for brunch buffets, busy holiday mornings, or even tailgate spreads. I love pairing them with fruit salad, hash browns, or even a big pot of coffee. You can also cut them smaller and serve as breakfast bites for parties or baby showers.
