Ingredients

  • 6 eggs
  • 3/4 cup cottage cheese
  • 1/2 cup diced bell peppers (red, yellow, or orange)
  • 1/2 cup diced zucchini
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Olive oil spray for muffin tin


Instructions

  1. Preheat oven to 375°F and grease or line a muffin tin.
  2. In a large bowl, whisk together eggs and cottage cheese until smooth.
  3. Stir in diced peppers, zucchini, shredded cheese, salt, and pepper.
  4. Spoon mixture into muffin cups about 3/4 full.
  5. Bake for 20–22 minutes, until eggs are set and tops are golden.
  6. Let cool slightly before removing from pan. Serve warm or store.
