Ingredients

  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 (15 oz) can kidney beans
  • 1 (14.5 oz) can diced tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1/2 cup corn kernels (optional)

Instructions

  1. Preheat oven to 375°F and grease a 9×13 dish.
  2. Cook ground beef, onion, and garlic in skillet until browned.
  3. Add beans, tomatoes, tomato paste, chili powder, cumin, salt, and pepper. Simmer 10 minutes.
  4. Pour chili into baking dish and spread evenly.
  5. In bowl, mix cornbread mix, egg, milk, and corn until just combined.
  6. Spoon batter over chili and spread gently to cover.
  7. Bake 25–30 minutes until cornbread is golden and cooked through.
  8. Cool a few minutes before serving. Top with cheese or sour cream if desired.
