Ingredients

  • 4 boneless skinless chicken thighs
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Season chicken with salt and pepper. Heat olive oil and butter in skillet.
  2. Sear chicken until golden and cooked through. Transfer to plate.
  3. Add onion; cook until soft. Add garlic and mushrooms; cook until browned.
  4. Pour in broth; scrape up browned bits.
  5. Reduce heat; add cream and Parmesan. Stir until smooth.
  6. Add spinach; cook until wilted.
  7. Return chicken; spoon sauce over and simmer a few minutes.
  8. Garnish with parsley; serve hot.
