Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 medium onion, diced
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix rice, chicken broth, soup, sour cream, onion, garlic powder, and half the butter.
  3. Spread mixture in a greased 9×13-inch baking dish.
  4. Season chicken with salt and pepper and place on top.
  5. Drizzle remaining butter over chicken.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil and bake another 15–20 minutes until golden and rice is tender.
  8. Cool slightly and garnish with parsley before serving.
