Ingredients

Scale
  • 2 ears fresh corn
  • 2 ripe avocados diced
  • 1/2 red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Char corn on a grill or hot skillet until lightly blackened. Cool and cut off the cob.
  2. In a bowl, combine diced avocado, chopped red onion, tomatoes, and cilantro.
  3. Add corn kernels, then pour in lime juice, olive oil, salt, and pepper.
  4. Toss gently to combine without mashing the avocado.
  5. Taste and adjust seasoning as needed. Serve immediately or chill briefly.

Notes

  • Use frozen corn if fresh isn’t available—just thaw and char in a skillet.
  • Add jalapeño or hot sauce for spice.
  • Keep avocado out until serving if prepping in advance.
  • Pairs well with tacos, grilled meats, or as a dip.
