Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 packs (16 oz) cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp lemon juice
  • 2 tbsp sugar (for sauce)
  • 1 tsp cornstarch

Instructions

  1. Preheat oven to 325°F and line an 8×8 pan with parchment paper.
  2. Mix graham crumbs and melted butter and press into pan. Bake for 8 minutes then cool.
  3. Simmer blueberries lemon juice sugar and cornstarch until thick. Cool slightly.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time then vanilla.
  5. Pour cream cheese filling over crust. Spoon blueberry sauce on top and swirl gently.
  6. Bake for 35–40 minutes until center is just set. Cool completely and refrigerate 3+ hours.
  7. Slice into bars and top with fresh blueberries to serve.
