- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 packs (16 oz) cream cheese (softened)
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
- 2 tbsp lemon juice
- 2 tbsp sugar (for sauce)
- 1 tsp cornstarch
Instructions
- Preheat oven to 325°F and line an 8×8 pan with parchment paper.
- Mix graham crumbs and melted butter and press into pan. Bake for 8 minutes then cool.
- Simmer blueberries lemon juice sugar and cornstarch until thick. Cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs one at a time then vanilla.
- Pour cream cheese filling over crust. Spoon blueberry sauce on top and swirl gently.
- Bake for 35–40 minutes until center is just set. Cool completely and refrigerate 3+ hours.
- Slice into bars and top with fresh blueberries to serve.
