Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup barbecue sauce (divided)
  • 2 cups mashed potatoes
  • 2 tablespoons chopped chives


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onions and garlic until soft and fragrant.
  3. Combine ground beef, onions, garlic, breadcrumbs, egg, Worcestershire sauce, and half of the barbecue sauce in a bowl; mix gently.
  4. Scoop the mixture into a greased or lined muffin tin and press lightly.
  5. Top each with some barbecue sauce before baking.
  6. Bake for 25–30 minutes until fully cooked.
  7. Prepare mashed potatoes while cupcakes bake.
  8. Cool slightly, pipe mashed potatoes on top, drizzle more sauce, and garnish with chives.
