Italian Chopped Salad became my go-to because I was craving something crisp as well as refreshing while also being full of bold flavors like salami in addition to olives and sharp cheeses so one summer afternoon I had leftovers from an antipasto platter therefore I decided to toss them all together with some lettuce along with a simple vinaigrette and as a result it turned into a vibrant dish that was both hearty and at the same time totally refreshing.

I love how every bite offers a little of everything such as the crunch of cucumbers followed by the juiciness of cherry tomatoes along with the briny punch of olives not to mention that classic Italian flavor from the salami combined with the dressing which is why it’s one of those salads that doesn’t feel like an afterthought instead it’s the main event especially when the days are hot or when you want a no-cook meal that still delivers tons of texture and flavor.
Ingredients
- Here’s what I use for this recipe. You can always make substitutions if you prefer!
- Romaine lettuce – Crisp and sturdy enough to hold all the hearty toppings.
- Cherry tomatoes – Sweet juicy and add bright color.
- Cucumber – Adds a refreshing crunch to balance the richness.
- Red onion – Sharp and punchy to contrast the creamy elements.
- Salami – Brings that bold classic Italian deli flavor.
- Mozzarella pearls – Soft and creamy for contrast.
- Green or black olives – Briny and savory they tie everything together.
- Fresh basil – Adds herbaceous flavor and a burst of freshness.
- Olive oil – The base of the dressing that brings richness.
- Red wine vinegar – Gives the salad that tangy Italian kick.
- Dijon mustard – Helps emulsify and deepen the flavor of the vinaigrette.
- Garlic – For a little punch in the dressing.
- Salt and black pepper – Essential to balance the flavors.
Tools You’ll Need
- Salad bowl – For tossing all the ingredients together easily.
- Knife – To chop and slice the veggies and meats evenly.
- Cutting board – A stable surface for prep.
- Whisk – To blend the dressing until smooth and emulsified.
- Small bowl or jar – For mixing or shaking up the vinaigrette.

Instructions
Step 1:
I start by washing and chopping the romaine lettuce into bite-sized pieces then I halve the cherry tomatoes slice the cucumber and thinly slice the red onion.
Step 2:
I slice the salami into thin rounds or half-moons depending on what texture I want then I gather the mozzarella pearls and olives and set them aside.
Step 3:
I place all the salad ingredients into a large mixing bowl and gently toss to combine everything.
Step 4:
In a small bowl I whisk together olive oil red wine vinegar Dijon mustard minced garlic salt and pepper until smooth. Sometimes I add a pinch of Italian seasoning or crushed red pepper flakes for extra zing.
Step 5:
I pour the dressing over the salad just before serving and toss well to coat then I sprinkle chopped fresh basil on top as a final touch.
Tips
If I’m prepping this ahead I keep the dressing on the side until just before serving to keep the lettuce crisp. You can switch up the protein by using prosciutto grilled chicken or even pepperoni. And if you like a creamier salad a drizzle of balsamic glaze or a spoonful of pesto stirred into the dressing makes a delicious twist.
Ways to Serve
This Italian Chopped Salad is hearty enough to stand alone as a meal but I also love pairing it with crusty bread or a cup of soup for a full lunch. It’s perfect for picnics cookouts or potlucks because it holds up well and looks beautiful on the table.
